Quick and Easy Pizza
Oh those dreaded words we hear most everyday, "what's for dinner!" Do you have a few go to ideas when you've been out all day and come home late or in my case this week, busy around the house organizing? When I am really busy the last thing I want to do is stop and spend a lot of time in the kitchen. Yesterday was one of those days when I went to my easy, healthy and delicious pizza. It's not all homemade, a few shortcuts which cuts the time. It's an anything goes pizza, just add your favorite toppings. I like to keep my favorite supermarket pizzas in the freezer for days like this. My favorite is a thin crust pizza Margherita with tomatoes. I then add my favorite toppings, summer fresh
vegetables for me with lettuce, heirloom tomatoes, basil, yellow grape tomatoes, peppers, onions and green olives. A little extra virgin olive oil and dinner is ready in thirty-five minutes.
I like to keep fresh basil in my sunny window in the kitchen
Summer fresh veggies, no meat for me
Chopp and slice toppings
Pile them onto frozen pizza
Lettuce
Sweet onion
Basil
Sweet green pepper
Heirloom tomatoes
Green olives
Lunch or Dinner
It's healthy, light and delicious.

Looks tasty! Our quick, easy and healthy summer meal is cold gazpacho. The chef makes up a recipe and keeps it in a bottle in the frige. Pour a cup and serve with a slice of fresh bread, no heating and no clean up.

ReplyDeleteEasy in summer... my favorite is toasted tomato and basil sandwiches (bacon if I want to be decadent) and a wonderful salad. And lately I've taken to making cucumber sandwiches! It's warm here and they are so cool and refreshing. Dull sounding, isn't it? But classic!
I love your blue and white container filled with basil Emily! (I have one that's similar!) The pizza looks delicious and is one of our summer go-to favorites. We've even grilled it! Enjoy your day:)

Your photos are like fine art! I wish I had a wall mural of that one of the blue hydrangeas at the top of the blog. We love pizza, too -- all kinds, and we discovered that our favorite frozen one comes from Trader Joe's. We always add extra stuff, too. I think you can put anything you can dream up on it, and it will always be a winner.

I love your idea of a quick, easy, fresh dinner, Emily! Your pot of basil, along with your soap dispenser looks so pretty by your kitchen sink. I can always come up with a quick salad, which I never tire of, with meat, feta cheese, strawberries, avocado, nuts and a homemade balsamic vinaigrette.

ReplyDeleteThe pizza look yummy! Tonight, I was tired after an afternoon spent painting the dreaded staircase ceiling and so I prepared a quick pasta salad with pasta (obvisouly), fresh and dried tomatoes, basil, olives, italian cheese and a drizzle of garlic olive oil.
