ITALIAN PASTA SALAD






Summer Supper ~ Light and Easy





River Market
Heirloom pink Tomatoes






Saturday I will be the Guest Blogger at my friend Diann's Blog, The Thrifty Groove. Thank You Diann, I am thrilled to do a post for you. 

I found inspiration for this post at our local River Market. Located on the river downtown you will find flowers, fresh fruits and vegetables, homemade jams, jellies and relish while listening to local musicians. Local farmers are here three times each week and I usually go once a week to buy fresh produce. Today I was hoping to find fresh herbs for a pasta salad my daughter-in-law makes. I always enjoy when she serves it so I asked her for her recipe. This recipe is perfect for summer, it's light, healthy and easy to make.

A nice glass of Red, now let's cook!





Ingredients

Italian Pasta Salad

Pasta (I'm using Bow Ties)
Feta Cheese (Big Chunks)
Fresh Herbs (anything you like)
Cherry Tomatoes
Spring Onions
Black or Kalamata Olives
Cubed Fresh Squash


Dressing 

Fresh Squeezed Lemon Juice
Extra Virgin Olive Oil
Garlic






Chop herbs and spring onions






Juice of One Lemon, Squeezed 





In a small sauce pan saute squash in small amount of olive oil




In a deep pot add water and salt, bring to boil








Add Pasta and cook, remove while still firm, or Al denta




 Drain



Add Herbs and Onions, Tomatoes, Olives, Feta, and Squash





Mix Lemon Juice, Olive Oil and Garlic together




Pour over Pasta and Mix





Asparagus grilled or cooked in oven tossed in Olive Oil and Celery Salt




Grilled Chicken







A light supper of Chicken, Pasta Salad and Asparagus




We have been having such a hot summer I've been looking for recipes to serve that are healthy and light and easy to prepare. I want to thank my daughter-in-law Catherine for sharing her grandma's recipe. My friend Diann will also be happy to know this is a very thrifty meal.   16. We love to have a "Tuscan" style dinner in the hot weather. Baguettes, cheeses, slices meats, melons, tomatoes of course. Basically a platter of fresh market foods and no cooking in sight.
    I love pasta salads but my husband does not. More for me and yours looks delicious. How do you like cooking with your copper pots? Do you have to change your recipes at all?
