I recently made my favorite Pound Cake to take to my Mother-in-Law's for a Family Sunday visit. I made this cake with Lemon flavoring, but you can easily change the flavor for a different cake, for instance, if you want to make this cake for Valentine's Day. The recipe calls for Lemon extract, and you could use Rose Flower Extract (fabulous flavor, I use in cupcakes) and add red or pink food coloring for a festive Valentine colored cake. Decorate with candy hearts. This is a simple recipe, easy, fun and DELICIOUS.......
POUND CAKE
all ingredients to room temperature
3 cups sugar
3 sticks butter ( 1 1/2 cups), room temperature
6 eggs, room temperature
3 cups sifted all purpose flour (I use cake flour)
add
3/4 cup sierra mist, or (your choice of fruit juice, soda, or nectar)
3 teaspoons pure lemon extract, or (your choice of flavoring)
1 teaspoon pure vanilla extract
Select your favorite bundt cake pan. I'm using Williams Sonoma's Cathedral Cake Pan
Preheat oven to 325 degrees. Cream sugar and butter in mixing bowl with a mixer until light and fluffy. add eggs to mixture one at a time and mix well between each. Add flour to mixture a little at a time and mix well. Add extract and your choice of liquid to batter and mix well.
Pour batter into a lightly greased and floured bundt pan. Bake for 75 to 90 minutes or until a toothpick in the center comes out clean. Cool cake in pan for 10 minutes on a cooling rack before turning out onto a cake platter.
Glaze
1 1/4 cups powdered sugar
3 tablespoons of lemon juice, more if needed, or (your choice of liquid)
Mix liquid into powdered sugar. Add more if needed to achieve desired consistency. Drizzle over cake while warm.
